Yup, all of those things you listed are fine within the rules. You could even use more than one attack at the same time if you'd like, you'd just have to come up with some way of explaining it in terms of fatigue and concentration and such so that it doesn't get silly. You'd only need an assist if they can smartly choose their own targets and do stuff without your character's input (I.e. Blue is punching a dude and Eevee chooses to run over and distract another guy). I could see this working well with having some of your stronger Pokemon being full Assists and having moves like Diglet popping up below someone's feet to trip them or Spearow kicking sand in the enemy's face, etc.
