Avatar The Last Air Bender (Not an Anime as such, but still you HAVE to watch it)
Digimon (Seasons 1, 2, 3 4(you can skip this one) and 5. The rest are horrible, though they are doing a new season and bringing the original characters back)
Don't discount Dragon Ball Z, it caters towards mature audiences.
Yugioh is another good one, but I wouldn't watch anything after Yugioh GX
