Dota 2 is almost certainly the best video game ever, IMO. I currently have over 1.5k hours played.
Smite & Paladins (i.e. budget Overwatch) are pretty fun too.

Looking back on it, it can be hard to list my favorites, but some shine brighter than others. In somewhat chronological order:
Crash Bandicoot Nintendo 64?): Pretty much one of the first game I ever remember playing (Also woody woodpecker), it most likely started me on the path to what I am today. There is plenty of nostalgia for me there.
Super Smash Bros Melee/Brawl (Gamecube): We had this program at my elementary school where kids could stay at school after it ended and play around, with sections divided by grade. The best days were when they brought out the Gamecube. There were other games like Madden (meh) and Monkey Ball (Played that SOOOO much), but the best was when we got to duke it out in Melee. I don't quite remember how we transitioned into Brawl, but I loved that game even more than Melee. I haven't played the newest Smash that much, it seems ok.
Pokémon: I actually have never owned a DS or something that could play one of the main Pokémon games, but my friends did. I could not help but fall in love, and have never ceased to love it. I still have over a thousand Pokémon cards : P
Halo Reach (Others to a lesser extent) (Xbox 360): Literally came with the console. Pretty much the reason why I'm such an FPS fan. More often than not I was on top of the leaderboards, and I played the heck out of co-op campaign. I enjoy good campaigns, I adore co-op.
Call of Duty (XBOX 360): Black Ops I & II: Black Ops came after Halo. I can be very competitive in-game, and once again I played and played until I started to dominate. Zombies was a blast. Black Ops 2, in my opinion, was a direct upgrade. Same thing as first, I still have fond memories of Nuketown. Zombies, as usual, took up a large amount of my time.
Minecraft (PC): THE REASON I am now a part of the PC Master Race. I can definitely tell you it is my most played game of all time. I was not so much of a Vanilla player, you would usually find me on one of the bigger servers or exploring a mudpack. However, as with most games, my refusal to play any game but it burnt me out. I have not played it in months.
Team Fortress 2(PC): MY GOD I loved this game. MvM was fantastic, I was toping the leaderboards, but GOSH DARN VALVE WOULDN'T GIVE US ANY UPDATES, so the content started to grow stale. They did release a new update, but I haven't played it yet.
CSGO(PC): Was where I got my competitive fix up until a few months ago. Outsmarting and outaiming the enemy FILLED ME WITH SO MUCH ADRENALINE, I would get called out for being too enthusiastic.
Undertale: The feels, man. I could not put it down, and after I completed the pacifist route, I had no heart to do a genocide run until several months later. It is one of the few games that have made me feel emotional.
Metro 2033 Redux (PC): I first played this on the xbox, was turned off by the first scripted encounter, but a friend encouraged me to pick it back up. Boy was he right. Whether I was sneaking around the subway of post-apocalyptic Russia or gunning down enemies, I was captivated, The story is fantastic.
The Elder Scrolls V: Skyrim (PC): We all know why.

Can someone tell me why Undertale is so loved? I've had two goes at it and the most time I played on either attempt was twenty minutes before I got bored.

I love lots of games, so I've only picked a small amount. This is in no particular order.
Warhammer 40K: Dawn of War (up to Dark Crusade)
This game is a god-like RTS. Engaging gameplay and great 40K narratives throughout the expansions. Haven't bought Soulstorm, yet, though.
Super Metroid
Nintendo's pixel art generally ages very well throughout the SNES library and that's no different for Super Metroid. There's a secret room inside a secret room inside a secret room, an amazing world to explore and epic abilities to use against enemies. However, I had to use a walkthrough to get the grapple beam because I'm a shit explorer.

Well, Undertale is not a game for everyone. The graphics are a mixed bag. They're often dull and ugly. Toby himself would only give his game an 8/10.
However, I genuinely loved everything else about it (I cried when I fought the final boss in the Pacifist Run.) except for three things. Undyne's development. The structure of the Genocide route. And one final choice in the Pacifist route which, if in the game (it's not), could've actually given me more of a dramatic conclusion.
*SPOILERS* though.

Undyne's development: So, you're in a world that's biased against you. Fish woman tries to murder you. And the game is heavy-handed on its themes about friendship. You're expected to make friends with her. You don't have to be BFFs forever, but the game expects you to make friends. To give us more development of Undyne's character, they could've given us a scene where Undyne realizes the horrible things she was involved in. We saw that Asgore was pressured by his people to send the Royal Guard to claim human souls. So, in my opinion, Undyne's character should've been developed a bit more.
The structure of the Genocide Route: Too grindy for me. I know the game itself tries to discourage you from killing everyone, but in my opinion, the Genocide Route should've been about a mixture of grindy killing and far more Royal Guard enemies to fight. The bosses were great though.
The Final Choice: We should've been given the option to tell the rest of the monsters about Asriel. I know it would break their hearts, but in a game where choices matter, that final option showing up would've made the game a lot better.
Welp, at least it's better than Life is Strange, right?
Undertale: 9/10

Well, since this is alive again, I gotta put my vote in for the Dominions Series. It's the only game where Thor can have a fistfight with Cthulu. The graphics aren't that great, and the UI can be a little obtuse, but goddamn it's fun. There's nothing like spending half an hour going over the commands of every wizard in your army, ensuring your troops are positioned correctly, and sending them into another force to watch the clash happen. I've had armies of Inuit Frog-men bathed in the stygian waters of the netherworld do battle with Samurai firing flaming arrows, marched armies of blind crusaders into battle behind a wave of reanimated corpses filled with gunpowder, and summoned long-dead Jewish Giant Warrior Kings from the afterlife to kick the shit out of some lizards.
It's a hell of a ride, and I highly recommend it.

Oof, this is a hard one because there's next to no games that I "keep" liking. I'm very focused on the novelty aspect of it when a game introduces a mechanic, a story or something else that I've not seen before, but when this wears off I tend to get bored very fast (it's also why I preferred the CoDs with jump jets and overheating weapons to the traditional arcade shooters, fite me).
That said, here's a handful in no particular order:
Blacklight Retribution. Starting with an oddball, I liked this one because it had a lot of customizability without affecting the balance much. There was no gun or mod that was strictly better than others, and the stuff you started out with was very balanced. Also, it had all sorts of fun (not necessarily competitive) gadgets, from throwables to a Riot shield. Pity that it's pretty much dead.
Planetside 2. The only MMOFPS that I know of, and damn did it do things right. Sure there's always issues here and there and the balancing wasn't the best, but there was a lot of fun to be had as infantry, as a vehicle driver, dominating the sky and everything else. There's little that beats the feel-good moment when you deploy a mobile spawn point in a prime position and it ends up being the beating heart of that zerg come to conquer the territory before you (especially because you get a few points every time someone spawns on your point).
Legend of Zelda. Almost each of them introduces some mechanic that the others don't have: Twilight Princess had the wolf, Minish Cap had the tiny form, Majora's Mask had the masks, Wind Waker had the ship... it's nothing revolutionary but I had a lot of fun with most of the games.
Monster Hunter Tri. I've been told that MH3 was one of the shittier titles because it lacked the cool weapons and stuff from its predecessors. If that's so I can't wait for the PC version of MH World, because damn was it fun (as little as I played it, admittedly - I never got past the Barroth). It dealt a huge blow to me to see the online mode being shut down after so little time, I never got to see any of the Online-exclusive monsters. Even so, its setting, the "boss battles" against huge monsters, the anime-sized weapons, everything just fits.
Rune factory Frontier. I've played it so little that I am ashamed. I love the Harvest Moon-esque farming, taking care of crops, using various tools to keep your farm in check and explore the world, coupled with a simple combat system. Harvest Moon was a little too calm and repetitive. The combat adds that sprinkle of pepper that completes it.
Okami. Didn't expect that one, did you? I am absolutely in love with the artstyle of that game, which portrays the characters immensely well. Couple that with a serious story, an amazing world, fun (but easy) enemies, a nice amount of humor to lighten the mood and you already have a fun game. And on top of that there's metric tons lot of japanese culture in the game: fairytales (altered to fit the story), Youkai as enemies, creatures of legend (the eight-headed serpent Orochi is just one example), japanese habits and customs... and everything just fits together perfectly. It's one of the few games I'm happy to play time and time again.
Overlord II. No, not the anime. The videogame wherein you command the name-giving Overlord who controls hordes of minions from a 3rd-person perspective. In Overlord 2 you're given the choice between Domination (bend the wills of the poor villagers to your will so they work for you) and Destruction (kill 'em all!), which don't change the story much but still make you feel like you're building your own empire. Also, you get to choose between three Mistresses, so that's nice.
