I'll reply to the above in order

I do agree on Ditto... suppose I didn't take into account that they are technically a replacable character. On the other hand, because that means I wouldn't take away a fallback option, I could consider making him an NPC Prime as there would be no "faceclaiming". Hmm... I'll have to think about this a bit.
Kaguya's very open, that's a pro I should have added. She's described a lot by other characters but because her personality doesn't appear all that much it leaves me with more freedom of decision. Which makes ruling her out more difficult, and leaves me with more "good" picks
And as for Gildarts & Erza... I do appreciate your, and Spur's, encouragement, and I sincerely thank you for it! I just feel like especially Gildarts's writing is objectively better than mine. I know that nobody (or hopefully nobody, anyway) on this site is arrogant enough to seek only partners similarly skilled, but I did, as an instance, feel a little overwhelmed by the better players's posts in this year's DA. (this may just be an instance of "On the other side of the fence the grass is always greener", of course) I'm just worried that I would not be able to keep up with either's levels very well.
Mirajane did definitely rise in my rankings though.

True - Sabrina has gotten Yang's weapons. I do still consider her a potential pick because her personality is vastly different from Sabrina though
(Yang is way more temperamental and aggressive where Sabrina is collected and defensive). I'll have to think a bit about this though. Possibly even rule Yang out entirely.

I'll get to writing once I have it narrowed down to max. 3 characters. I heard the advice before but I want to narrow it to a proper list, as 5 characters is just too much.

Stop dat right now. You're an awesome writer, they'd likely be privileged to write with you, and you shouldn't be thinking about "who your writing level" intersects with instead of having fun and derping around!

You seem to have transferred a lot of Yang over to Sabrina, with the gauntlets being found by her. Duplicate moves that take so much priority in combat could make the character feel repetitive, as tempting as it might be to get the RWBY team back together. I would avoid this one unless you have a very strong pull towards this character's personality and a solid plot idea.
Gildarts and Erza are great writers, but so are you. Even if you weren't (which, again, you really are. Take my word for it: you were briefly involved in a star piece quest on Cinnabar Island... I was watching you closely while thinking about TWO of my characters and how it would affect them) I'm confident in saying they would love to tell a story alongside you, so you can dismiss that already irrelevant concern.
Mirajane is my vote, based soley on the fact that the cons you've listed are easily negated by your own writing and direction. Ditto is my other vote, after touching base with Illidan/Jim, but that's simply because its the only source material I'm familiar with, of that list.
Final bit of (worth what you paid for it) advice: I had six characters I was actively considering for my third, but writing a post as them narrowed it down to just two, which made it that much easier to pick one. I didn't do the Nexus entry post, I just wrote a theoretical post involving them already established in the Omniverse. The same methods don't always work for everyone, but that was mine at least.
