Malleability is taking your already-present body and...moving it around. Stretching out, shrinking, moving around your organs or limbs, opening a hole in your torso, etc. Shapeshifting is, as you said, the purview of changing your entire form to look like someone else; it's more of hiding your real self under a mask or disguise, as opposed to actually changing anything.
The examples you provided wouldn't even need the shapeshifting power, only the appropriate powers/moves if they are intended to have any functional effect.
