The bond is broken if Kvothe suffers enough truama or simply chooses to let go of it. A swift kick to the head or other similiar source of pain would be enough to make him drop his bonds in most situations. It should also be noted that another Sympathy user can *contend* a bond and try to take control of it (or simply break it) and while there are not other Sympathy user's within the Omniverse
Once a bond is created however it lasts until it is broken. There are multiple risks with holding onto a bond for an extended period of time however; as stated in the description it takes almost 1.5x as much force to move something using sympathy than it would take using your hands which can be very draining on both the body and mind. Another thing to consider when trying to hold onto a bond for a long period is Thaumic Overfill, aka slippage, which is energy feedback into the user. As with the laws of physics, energy cannot be created or destroyed, so where does the energy lost during Sympathy go? The answer is three places: into the objects being moved, into the air, and into the person who made the bond. Having to much energy feedback into you will quite literally cook you alive as it is converted into heat inside your body.
