Title: Recipes, Hella Good!



so while i was in the underverse i was invited to a party with a very exclusive list, apparently, the friends i'd made weren't able to make it and invite me to go in their stead. i had a wonderful time, there. great music - a bit stuffy mind you. very colorful decorations, gorgeous chandelier with a great swing to it. it was the ball of all balls, yo.


the best part, as any regular party-goer will tell you, was the food. if you don't have good food, your guests are going to groan!


UNFORTUNATELY, i was unable to get any of the actual recipes, something came up and the party was just ruined! but i decided that wasn't going to derail this week's progress.

Homemade Chewy Brownies

These Homemade Chewy Brownies are thick, chewy, fudgy and made completely from scratch. You'll never need a box mix again!!

Servings: 9 brownies

Ingredients
1 1/4 cups sugar
1/4 cup water
2 ounces unsweetened chocolate, chopped into small pieces
3/4 cup all purpose flour
1/3 cup regular not dutch process unsweetened cocoa powder
1/2 cup semi sweet chocolate chips
1/4 teaspoon baking powder
Pinch of salt
2 large eggs, lightly beaten
1/2 cup vegetable oil
1 teaspoon vanilla
Instructions


Preheat oven to 350 degrees F. Line an 8x8 or 9x9 baking pan with parchment paper or foil and lightly grease with cooking spray. Set aside.
In a small saucepan combine the sugar, water and unsweetened chocolate. Cook over medium low heat until chocolate is melted and smooth (about 3-5 min). The sugar will not be dissolved. Let mixture cool slightly (about 5 min).
In a large bowl add mix together the flour (spoon flour into measuring cup and level off with the back side of a knife for accurate measurement), cocoa powder (spoon cocoa powder into measuring cup and level off with the back of a knife for accurate measurement), chocolate chips, baking powder and salt. Mix until combined. Pour in the oil, eggs and vanilla. Pour in the melted chocolate and stir all just until combined. Don't overmix!! Spread evenly into prepared pan and bake for 40 minutes or until a toothpick inserted comes out with SOME MOIST CRUMBS. DO NOT OVERBAKE if you want moist and chewy brownies. Cool completely before cutting.



Suggestions:
so, the ones i had were very chewy and moist. i think it was because of the key ingredient. unfortunately, they don't have eyeballs and grubs at your local wholesale store. i recommend grabbing a container of nightcrawlers from the bait shop and cutting them into pieces. should be good enough substitute.

Ladyfingers
Yield: about 50


1 Cup All purpose flour 135 g
6 Egg yolks, large
1 teaspoon Vanilla extract 5 ml
6 Egg whites, free of yolk traces!
1 Tbsp xtra fine granulated sugar 115 g
Powdered sugar for dusting As needed


Set the oven at 400°F (200°C).



Prepare 2-3 baking sheets with parchment paper and set aside. If piping the ladyfingers prepare a piping bag fitted with a baking tip slightly smaller than ½ inch (1 cm).
Sift the flour twice and set aside.
Whip the egg yolks and vanilla on high until a thick ribbon forms and the color is pale, at least 8 minutes. Set aside.
In a separate and immaculately clean bowl whip the egg whites and sugar to a very stiff consistency (as seen in the picture). Remove from machine.
With a spatula stir the meringue around to make it smooth and homogenous. (Since they do not contain flour or egg yolk yet, they will not fall)
Quickly scrape the whipped yolks to the meringue and fold gently with a spatula until almost completely mixed together. Some yellow streaks may remain.
Gently fold the sifted flour into the mixture taking care not to overfold.
Place in the piping bag and pipe into long fingers or spread evenly onto two baking sheets.
Dust with powdered sugar and let sit for a minute. Dust a second time and place in the oven until golden brown, about 10 minutes.


Suggestions:
these are not nearly as crunchy as the ones i had. mostly because there were no actual bones. i think if you insert some pretzels, thick ones, this might work. the soft spongey texture mimics the 'skin' okay enough.

the last thing i remember being so interesting and cool was pretty simple. unfortunately, i didn't catch what the key ingredient was, but as a good substituted i suggest slapping some spreadable cheese on different flavored crackers, and some kind of topper. tomatoes, olives... etc.
