Who says the teams need to be the same each round? If teams are random, they might as well change them each round. So with double elimination you get a free 'reroll' sorta thing. If teams are random, I'd rather it was like that.
I don't really care what happens as long as there's something to make this be different from just a bunch of dumb 1v1s. Even a 2v2 tournament where you can choose a friend would be fine, imo. The odds wouldn't really be any more stacked than you getting an unlucky 1v1 pairing. Random 2v2s also work.
