How does mimic acquire more passive powers like sensory things?

I already said most of them, Sensory powers. Life detect etc, except telepathy.

Or the weaker regeneration, although pretty much all regeneration powers appear to be useless without moves.

Since you clarified that you mean things that are harder to perceive... here's the quick and dirty answer: If you can't perceive it in some manner, you can't copy it. If you have an ability which would allow you to perceive it (such as Insight), you're good to go. OR, alternatively, if you witness someone use an ability which has a way of being "seen" (such as Regeneration), or if someone explains to you how it works.

So with Insight there would be no need to witness moves provided you can see who you are mimicking

I would say yes. With Insight you can mimic their moves, without performance, if they are in vision. Mimic requires to be able to see their moves and Insight allows that.
